Trying to plan the perfect dinner dating can be a little tricky, especially when you offer to cook the meal. Women think it is wonderful when a man offers to cook for her home cooked meal. Of course, you want it to be nutritious as well as low in calories. Make sure you have an appetizer, main course and desert.
For the main course, make mushroom fritters. The ingredients are 4oz mushroom, chopped, 1 tsp lemon juice, 2 tbsp chopped green onion, 2 tbsp chopped parsley, 1 cup sifted flour, 1 tsp baking powder, ¾ tsp salt, ½ tsp dried thyme leaves, 2/3 cup milk, 1 egg separated and oil to deep fry.
In a large bowl, combine the mushrooms, lemon juice, green onions and parsley. In a smaller bowl you want to mix the flour, baking powder, salt and thyme together. Mix the liquid mixture with the dry ingredients after you beat the egg yolk and milk together. Combine until moistened. Beat the egg white until you get white stiff peaks and blend in with the mixture. The oil should be 375 degrees. Drop tablespoons of the mixture into the oil for 2 minutes or until golden brown. Be sure to flip at least once. Drain on a paper towel.
The main course is Mexican rice and is super easy to make. All you need is 2tbsp olive oil or margarine, 1 cup uncooked rice, ½ cup chopped onion and green pepper, 2 cloves minced garlic, 1 tomato chopped, 2 cups chicken broth some salt and 1 tsp cumin seed.
Heat the butter or oil and add rice stirring often. Then add the onion, pepper and garlic stirring till the onion is soft. Add the tomato then broth and cumin. Reduce heat and simmer till rice is tender. Add salt to taste.
For dessert, add chopped apple, oranges peeled, grapes, passion fruit and ¼ cup of orange or grapefruit juice your choice. Toss and serve.
